Molino del Cerro Rubio is a restored windmill perched on a low hill overlooking Fuente el Fresno and the plains of the Campo de Montiel. It stands as a tangible link to the region’s agrarian past and a striking local landmark: historically used for grinding grain, it exemplifies the traditional La Mancha windmill typology tied to Don Quixote’s landscape and to centuries of cereal cultivation. The mill’s conical stone tower, whitewashed exterior and original wooden cap and sails (reconstructed) are notable architectural features; the interior preserves the vertical shaft, gears and millstones arranged in the classic Spanish post-and-sail mechanism, offering insight into pre-industrial milling technology. Restorations respected vernacular materials and proportions, maintaining its silhouette against the skyline. The site is also culturally significant: it participates in local festivities tied to Manchegan identity and occasionally opens for guided visits and seasonal demonstrations of grinding techniques, sometimes accompanied by tastings of local breads and olive oil. Its prominence on the Cerro Rubio makes it a photographic viewpoint for sunrise/sunset over the plateau and a symbol of Fuente el Fresno’s rural heritage.
